I found this recipe over at http://fitmencook.com/quinoa-chicken-stuffed-bell-peppers/ along with a million other options. Kevin really knows how to whip up some great meals! When I am tired and fresh out of dinner ideas he keeps me from throwing in a frozen pizza.
3 t0 5 bell peppers
1 lb 93% lean ground turkey
chili powder, cumin & cayenne
1.5 cups cooked quinoa
1/2 cup diced bell pepper
1.5 Tbsp tomato paste
1 cup low-sodium chicken broth
3 Tbsp mozzarella cheese
- Cook Quinoa per package instructions
- Brown the ground turkey & season with chili powder, cumin & cayenne pepper in a large fry pan
- once turkey is browned, add quinoa, diced bell pepper, tomato paste & chicken broth
- Cut tops off bell peppers and remove seeds
- place in baking dish and fill with ground turkey mixture
- sprinkle mozzarella cheese on top
- bake at 350 for 15 – 30 minutes (until cheese is melted and they are heated through)
