Coconut Flour Bread Loaf

Hi all!

I am so so so excited to share this recipe with you!  As  you all know I do weekly meal prep every Sunday….I am prepping for a competition again so I am trying to keep MY meals pretty dialed in and no “extras”.  I feel a little bad for Jeff when this happens because he gets what I eat just a larger serving.  I feel bad because he is NOT prepping for a competition 😀 but still gets no “fun extra’s” in his lunch.  Well…Chicken Wild Rice Soup was on the menu for this week and although it is yummy and filling I wanted some sort of bread or muffin to go with it for him, but did not want to be in the kitchen for another 2 hours and have a bazillion extra dishes to do.  I headed on over to Pinterest and HELLO HOTNESS!!  I found this quick and so very easy Coconut Flour Bread Loaf recipe at http://health extremist.com visit the link for more yummy meal ideas.

Coconut Flour Bread Loaf
1/2 cup coconut flour
1/4 cup melted coconut oil
1 egg & 6 egg whites
2 – 4 tablespoons raw honey
1/2 tsp apple cider vinegar
1/2 tsp baking soda
1/4 tsp sea salt

Directions:
1. Add all ingredients except the apple cider vinegar & baking soda to a large bowl & mix well.
2. Add the baking soda & apple cider vinegar; mix the batter
3. Use about a tsp of coconut oil to grease a loaf pan
4. Bake at 350 for 40 – 50 minutes(Mine took about an hour to bake)

I think I will try a banana bread version and also a pumpkin spice version in the near future!
